Perhaps you are surprised to see a Swiss restaurant feature in a list of exotic restaurants. But actually, 50 years ago, many Swiss people from the Valais region - including the family who opened up what was then the “Vieux Renard” (Old Fox in English) - came to Geneva looking for work, just as those from other communities do today. The d’Allèves family have now passed on their business, but the renowned restaurant continues to showcase local delicacies, in particular its famous fondues and raclettes made with cheese from the best local cheese-makers in Valais and Fribourg. The staff speak 10 languages and enjoy helping tourists discover Swiss specialties, whilst Swiss diners, often from other Swiss cantons, delight in the typical decor of cuckoo clocks, red and white checkered tablecloths, and pictures of animals being taken up to Alpine meadows. The Edelweiss flowers, emblem of the Swiss Alps, are not only decorative: they can also be drunk in a tea or eaten in a delicate dessert.
